Carrots are one of the vegetable in which root, rather the tap root is consumed.  Carrots come in various colors such as red, orange, yellow and purple.  They also come in various length and sizes ranging from half inch to 2 inches diameter.  Carrots are one the most used vegetables in salads all over the world and very popular choice of food for most people who are dieting for weight loss.

Carrots have several health benefits and some of those are mentioned in this article.  Before we go to the health benefits let us see some of the nutrition available in carrots.

Improves Your Vision – Carrots contain Vitamin A which are vital for eye health.  Vitamin A is converted to to rhodopsin, a purple pigment necessary for night vision. So if your night vision is going down start consuming more carrots.  Macular degeneration is another eye disease which can be prevented by Carrots because of Beta Carotene.

Improves Heart Health – Since carrots contain soluble fiber they reduce the LDL cholesterol levels, which are responsible for heart diseases.  As mentioned above carrots also contain beta carotene and alpha carotene which are also responsible for better heart health.  Some studies have shown that people consuming around 6 carrots a week are less likely to suffer from strokes.

Prevents Cancer and Regularity – Carrots contain falcarinol and falcarindiol which are kind of natural pesticides found in carrots which prevents then from fungal attacks.  These two pesticides also help in preventing cancers or certain kinds such as colon, breast and lung cancers.  The fiber in carrots helps in having a easy bowel movements and prevents problems such as constipation.

How to Increase the Benefit of Carrots

It has been observed that only 3% of the beta carotene can be absorbed by the body.  One of the best option is to cook the carrot.  Then the carrots become more digestible and the benefits increase many times more.
